Quick & Simple Mini-Pizzas – have the kids help!
We love Hormel Turkey Pepperoni (register to get some free coupons for Hormel pepperoni here), even more than regular Pepperoni. It’s the only meat that my kids will eat no matter what (chicken nuggets is a close second, but even picky Miss Boo has turned those down on occasion) & it’s good for you (well, better than the regular stuff).
We started eating Turkey Pepperoni after I made my first recipe out of my Hungry Girl cookbook (about a year ago). We made the Hungry Girl Perfect Pepperoni Pizzas (mini pizzas) & have used the recipe as a guide for a quick meal (or snack). The following recipe makes 12 mini pizzas. I did purchase some ingredients on sale. To make 12 mini pizzas, it cost me $3.82.
Ingredients:
6 English Muffins
1 1/2 C. shredded mozzarella cheese
48 pieces of turkey pepperoni
3/4 C. tomato sauce (you can season this with oregano, garlic powder, onion powder, red pepper flakes, or whatever your heart desires — or you can substitute the tomato sauce with pizza or spaghetti sauce — I like to use Ragu’s Chunky Vegetable spaghetti sauce in Garden Combination)
Directions:
- Preheat oven to 350ºF.
- Split English Muffins in half & spread a Tablespoon of sauce (your seasoned tomato, pizza or spaghetti sauce) on each half.
- Place 4 turkey pepperonis on each English muffin half.
- Sprinkle mozzarella cheese over each half (approximately 1/4 C. of mozzarella cheese per 2 halves).
- Cook pizzas for 12 to 14 minutes.
When the mozzarella is melted to your liking, remove the pizzas & enjoy!
To make the Hungry Girl version of these, use fat-free mozzarella cheese & light English Muffins. The Hungry Girl version is only 190 calories for two mini pizzas; the version I made was 253 calories per 2 minis.
